Greek Yoghurt is one of those ingredients that are overly neglected in British cooking which is surprising as it is so versatile as a fat/oil replacement in many dishes.
It is great as a marinade base for many chicken dishes as it easily absorbs the flavours personal loan rate uk of any spices and herbs added to it thanks to the fat content. In this dish I added the great combination of chilli and lime to the yoghurt which adds a nice kick to the creaminess of the dish and helps emphasise the flavour of the baked chicken.

2 large Chicken Breasts.
200g 10% Fat Greek Yoghurt.
2 Tbsp. Chilli Powder.
1 Lime, Juiced and Zested.
1 Tsp. Sea Salt.
1 Tsp. unsecured bad credit installment loans Black Pepper.
Combine the Greek Yogurt in a large bowl with the Chilli Powder with the Lime Juice, Lime Zest, Sea Salt and Black Pepper. Mix thoroughly until the marinade has a light orange tint from the Chilli Powder, add more chilli if you like it hot!
Make deep gashes in one side of the Chicken Breasts. Thoroughly rub in the marinade over the chicken, getting lots into the gashes. Place the chicken with the marinade into a sealable container and put into the fridge overnight to absorb some of the marinades flavour.
I put the Chicken into separate containers so that I could easily separate them the next day when I needed them!
Remove the Chicken Breasts with Marinade from their containers and put them into individual oven-proof pots.
Put the pots into a pre-heated oven at 180°C and bake for 30 Minutes.
The pots should have a nice brown tint to the installment loan poor credit top when taken out, whilst the marinade should have hardened slightly yet maintaining its creamy nature. Set aside for 5 minutes and then serve immediately. I serve mine with boiled Sweet Potato and Spinach.
