I have started using the excellent Geeta’s spice blends for the base of many of my currys. They are strong blends which do not contain a lot of the fillers of some of the bigger brands, an advantage of this is that they are gluten-free!
As with most of my dishes I have used a lot of vegetables to increase the amount of food per serving whilst limiting the calorie overhead. You can of course reduce the quantity of vegetables if you prefer a higher sauce to chunky ratio!
This recipe generously serves 2 if served without a side (my personal preference) or 4 if served with rice.
2 large Chicken Breasts, cut into 3/4 inch chunks.
4 Bell Peppers, sliced thinly.
2 large loan in usa Onions, diced.
1 packet Geeta’s Rogan Josh Spice Mix (30g)
1 Tbsp. Olive Oil for onions.
3 Tbsp. Olive Oil for marinade.
1 tin Chopped Tomato.
1 Tsp. Maldon Sea Salt.
4 cups Cooked Rice, if using.
Make the Marinade:
In a bowl mix the Rogan Josh Spice Mix with the 3 Tbsp. Olive Oil and Tsp. Sea Salt to form a nice runny marinade.
Thoroughly mix the chopped Chicken Breasts into the marinade, ensuring that it fully coats all parts of the chicken. Remove the Chicken and nearly all the Marinade from the bowl and put into a pot and seal. This can then be put into the fridge overnight to absorb the curry flavours – marinading is essential to making the chicken taste so good!
At this point I like to put the Onions into the bowl that the marinade was in and mix them with any left over marinade to absorb a little of their flavour. These can then be put into a separate pot and stored overnight with the chicken.
Heat a large Wok over a high flame and add the Tbsp. Olive Oil. Once the pan is hot add the unsecured credit loan chopped Onions to the wok and cook until nicely browned.
Once the Onions are nicely browned, throw in the Bell Peppers and mix in thoroughly to continue cooking with the Onions for around 3 minutes.
Now payday loans providers add the Chopped Tomatoes to the Wok. Bring the pan to a boil and then lower and allow the Curry to simmer until the Chicken is cooked thoroughly.
Serve immediately in either two large bowls for two people, or served with a rice of your choice for four people. Enjoy!
